SEA TREASURES
For as long as I can remember, I have cherished a deep fascination for these treasures of the deep – for that is what they are, every single one of them.
The intense richness of flavour, the colours and hues, the power and the sense of character they embody: it is a singular thing to capture, whether in a dish or in a picture. These are odes to Mother Nature; an homage to the frailty of the treasures concealed by shells and crusts.
They are narrative portraits of a shrimp family at a funeral, gem-encrusted lobsters, or a crab with a gilded stare. Diving under the surface, daring to fantasize is necessary to be able to touch the story and the essence.
